Weiß, schwarz oder weißlich, jede Trüffelart gibt dem Essen einen unverkennbar himmlischen Geschmack und ist unbestrittener König der kulinarischen Tradition unseres Landes. Gioacchino Rossini nannte ihn „Den Mozart der Pilze", um die Brillanz und
Einzigartigkeit hervorzuheben. Die Trüffel hat eine lange Geschichte. Bekannt und
geschätzt seit Jahrtausenden, stammen die ersten Berichte von diesem köstlichen
unterirdischen Pilz aus der babylonischen Zivilisation im dritten Jahrtausend v. Chr.
Der erste Nachweis des Vorhandenseins von Trüffeln in der Provinz Brescia, stammt
jedoch aus dem Jahre 1415. Dies wird durch ein Dokument aus dieser Zeit bestätigt,
das den Verkauf von Trüffeln zwischen einem Pecino und einem Herr Malatesta formuliert. Und noch weitere Hinweise, die bestätigen: „in Garda finden sich Pilze und
Trüffel unterschiedlicher Qualität und zart im Geschmack, Köstlichkeiten für die Gerichte der Herren. Darüber hinaus wurden seit dem Beginn des letzten Jahrhunderts
Menschen, die sich dem Sammeln widmen, in der Provinz Brescia bekannt.
Der Stamm von Salò
Er wurde während der Forschung für die Gemeinde Montana Alto Garda entdeckt,
zwei Stationen auf 4800 abgebildeten, beide in der Gemeinde Salò.
Der Duft und der Geschmack verweisen auf das wertvolle schwarz. Aber der ertragreiche Körper ist anders. Die Rinde oder Schale ähnelt dem Sommertrüffel während der Kern oder die Gleba an den Wintertrüffel erinnert. Er ist immer gut rund,
eine gute Größe, sehr resistent gegen Frost und Fäulnis. Der Geruch und der Geschmack sind optimal. Wir speicherten die D.N.A. in einer Datenbank der Vereinigten Staaten. Ein runderer Körper und haltbarer. Ausgerechnet in Salo, wird jedes
Jahr im Januar eine Veranstaltung zum Thema Trüffel organisiert.
Es ist eine Ausstellung, in der verschiedene, zur Sammlung zugelassene, Trüffelarten
präsentiert werden. Außerdem sind die Trüffelbauern mit ihren Verkaufsständen anwesend. Es gibt Proben der verschiedenen Arten, die zu dieser Zeit reifen.
Die Veranstaltung heißt „Profumo di tartufi" und ist die einzige Veranstaltung über
den wertvollen schwarzen Trüffel aus Norditalien.

White, black or whitening, each species of truffle enriches dishes with an unmistakable heavenly flavour, thus becoming unquestionable in the gastronomic tradition
of our country. Gioacchino Rossini dubbed truffles as “The Mozart of mushrooms” to
highlight his ingeniousness and singularity. Truffles have an ancient history. They have
been appreciated and known for millenniums; the first signals of these delicious hypogean mushrooms date back to the Babylonian civilization, in the third millennium
BC. However, the first testimonies about the presence of truffles in the province of
Brescia date back to 1415. This is confirmed by a document from that time certifying
the sale of truffles between Pecino and Mr. Malatesta. There are also other statements indicating that “in Lake Garda there are very delicate mushrooms and truffles of different qualities, delicacies for the meals of the lords”. In addition, as from
the beginning of last century, the people who collected them were known in the territory of Brescia.
The Salò stump
During the research conducted for the alpine town of Alto Garda, only two stations
were found out of the 4800 that were mapped. Both of them were located in the
town of Salò. The aroma and flavour are reminiscent of the precious black truffles.
But the fruit body is different. The peridium or skin is similar to that of summer truffles,
while the flesh or gleba brings the brumal Tuber to mind. They are perfectly round,
with good size and very resistant to cold and decomposition. Their aroma and flavour are optimal. We have placed the DNA in a database in the United States.
Those with round body are more resistant ones. In Salò, every year during the month
of January, an event dedicated to truffles is organised. It is an exhibition in which
the different species of truffles suitable for harvest are shown. In addition, truffle pickers are present with their stalls. Visitors can also try the different types that ripen in
that period. The event is called “Profumo di tartufi” (Aroma of Truffles), and it is the
only event dedicated to the precious black truffles of Northern Italy.

Gardaland Magic Halloween ist bereit, spaßige Schauer des Schreckens unter die
Gäste zu bringen, die den berühmten Vergnügungspark ab dem 5. Oktober und

zombies, vampires, ghosts, spiders, bats and witches have been mustered to Gardaland in order to celebrate the terrifying festival.
For the inaugural day of Gardaland Magic Halloween – on 5th October – all Guests
are invited to give free rein to fantasy and to dress up as monsters from head to
toe. Wearing this costume, they will be able to access Gardaland at the special
price of 10 Euros. No limit is imposed to creative inspiration as long as the disguise
includes a hat or wig, monster-like make-up and a similarly horrifying outfit. And
there is so much more! Also on 5th October, at 4.15 p.m., the massive “Gardaland
Zombie Walk” will start from Merlin The Magician Castle, with the participation of
adults and children dressed up as zombies and frightening night creatures. In order
not to get unprepared to the terrifying walk that will parade through the Park, there
will be make-up stations where Guests will be able to be made up in horror style. At
4.40 p.m., in Valle dei Re square, participants will be involved in the most famous
dance of these times in Halloween version: the “Gardaland Zombie Zumba”! There
will also be a perfect musical score: the “Slick Steve and the Gangsters” band will
animate the public with a one-of-a-kind show and overpowering music. For further

Grana Padano has been a part of Italy's proud gastronomic heritage for around 1000 years. It is a semi-fat hard
cheese, with a fine grainy structure, mellow and tasty flavour yet never overpowering and can be found in 3 vintages: Grana Padano DOP (9 to 16 months of ageing),
Grana Padano "oltre 16 mesi" (over 16 months) and
Grana Padano Riserva (over 20 months). This variance in
maturity leads to dramatic differences in flavour and texture. Grana Padano is the most sold PDO cheese in the
world.
The excellent proportions between energy value, quality and quantity of nutrients - "fewer calories more nutrients" - make Grana Padano an ideal cheese for all
ages.
It takes 15 litres of good fresh milk from the production
area to make 1kg of Grana Padano cheese. So it is a
milk concentrate with high biological value proteins for
the muscles, lots of vitamins including B group and antioxidants such as zinc and vitamin A, which protect cells
from free radicals.
But in particular Grana Padano is a great source of calcium: just 50 g are needed to provide 600 milligrams of

Die Produkte des Dorfes

The products of this town

in the Alps is given to the Alpe del Garda Cooperative and transformed into butter
and typical cheese varieties. The most famous ones are Formagella of Tremosine
and Garda, which feature exclusive characteristics that are much appreciated by
gourmets. In addition, fresh cheese, natural yoghurt, ice creams, ricotta cheese
and pork salted meat are also produced.
Other products are also characterised by their high quality: honey and extra virgin
oil, which is obtained in cold by squeezing olives with grinders and the pulp with traditional presses; this oil has low acidity, delicate taste and high digestibility.
In the woods of chestnuts, beeches and conifers, mushrooms grow in autumn. A
product with an ancient tradition that has been recently rediscovered in the mountain belt is the truffle, both white truffles, the most valuable ones, in the period between October and December, and black truffles, which ripen between November
and March.

sogar das Brot, die Nudeln und die Polenta zubereitet. Die Marone, reich an Stärke,
Kalorien (100 Gramm des frischen Produkts entspricht 200 Kalorien, trocken bis 300),
Eiweiß, Mineralstoffe und Vitamine, ist sie wahrlich sehr nahrhaft und energisch, gesund und leicht verdaulich. Sowohl Verdaulichkeit wie Kalorienzufuhr variieren je
nach dem Zustand und der Art des Kochens. Eine "rohe" Verdaulichkeit ist eher
schlecht, während die Kalorienzufuhr bei etwa 150 Kalorien pro 100 Gramm einsetzt.
Das Kochen erhöht die Verdaulichkeit und reduziert die Kalorienzufuhr auf etwa 120
Kalorien pro 100 Gramm, während die Röstung sie auf rund 200 Kalorien bringt.
The marrone di San Zeno is a variety grown in the chestnut groves located on the
slopes of Monte Baldo in Verona, between the Adige River and Lake Garda. For
many centuries, chestnut growing has represented an important economic resource for the farmers of this area. In fact, the first historical references to chestnut
growing date back to the Middle Ages; whereas from the 1920s, the Town of San
Zeno di Montagna witnessed the beginning of the traditional marrone festival, which
has been passed down up to the present day with the name of “Mostra Mercato
del Marrone” (Chestnut Fair). The 29th Edition of this Fair will be held this year.
How to eat them
Roasted in large holed-bottom pans (which are known as “caldarroste”), boiled in
water or used to prepare exquisite desserts such as the “castagnaccio” (a chestnutflour flat cake), marroni are the symbol of autumn, as they are the fruits that best encompass the essence of the flavours and colours of this season. For many centuries,
chestnuts have been a major food source in Italian mountain regions. Their flour was
baked into bread and used to make pasta and maize porridge. Rich in starches, calories (100 grams of fresh product contain 200 calories, and when dried up to 300 calories), proteins, mineral salts and vitamins, marroni pack a lot of nutrition and energy,
are healthy and easily digestible. The degree of digestibility and the calorie count
vary according to the chestnut condition and the way in which they are cooked.
“Raw” chestnuts are hard to digest and yield about 150 calories per 100 grams.
When boiled, chestnuts become easier to digest and the calorie count dips to
about 120 calories per 100 grams. Roasting brings calories up to around 200.

Auch in diesem Herbst steht wieder die einzigartige Veranstaltung „Profumi di Mosto"
an, ein önogastronomisches Festival zur Weinlese in den Kellern von Valtenesi und an
der Breskiana Küste von Garda. Die Veranstaltung, die in sich einzigartig ist, bringt 22
Unternehmen zusammen, die ihre Keller für die Besucher öffnet für eine Verkostung
der Weine, die überwiegend aus Trauben der einheimischen Groppello erzeugt werden, gereicht mit traditionellen Gerichten aus Brescia, angeboten vom Küchenchef
aus der Region oder von dem Weingut selbst.
Die Teilnehmer können die Keller über eine vorgegebene Route besuchen, die von
Desenzano bis Puegnago geht, durch die Gemeinden des Landesinneren wie Calvagese, Bedizzole und Polpenazze und an den Küsten wie Moniga, Manerba und
Padenghe.

This autumn, the particular exhibition "Profumi di Mosto", the wine and food fair devoted to vintage in the wine cellars of Valtenesi and on the Brescia coast of Lake
Garda, is back to the scene. The event, which is unique in its kind, gathers together
22 companies that will open their wine cellars to visitors for them to taste wines produced mainly with grapes coming from the autochthonous Groppello vine matched with traditional Brescia dishes proposed by the chefs of the area or by the
wine cellar.
Participants will be able to visit the wine cellars in an articulated path that goes from
Desenzano to Puegnano, crossing inland towns such as Calvagese, Bedizzole and
Polpenazze, and other coastal towns like Moniga, Manerba and Padenghe.
