GRAPPA MILLE LUNE Le Vinacce: 100% Chianti Classico Il Vigneto: le vigne sulle colline di San Donato in Perano a 400/450 m di altitudine; le viti allevate a cordone speronato su terreni altamente vocati ed esposti a sud hanno prodotto 60 quintali di uva per ettaro. La distillazione: condotta in due alambicchi discontinui ove la vinaccia viene coricata in bagno d’acqua riscaldata progressivamente fino all’ebollizione e privata della componente alcolica e aromatica in maniera delicata e senza strappi. La distillazione prevede, quasi fosse un rituale, l’allontanamento delle teste, ovvero il primo distillato che esce dalla serpentina di condensazione, a cui seguono la raccolta del cuore e la separazione delle code. Il prodotto ottenuto riposa per oltre un anno, periodo di affinamento in cui i complessi componenti di questo cristallino si fondono in sfumature delicatissime, quasi impercettibili. Diluita per abbassare la gradazione dai 76° a quella desiderata, la grappa è posta a temperatura di alcuni gradi sotto zero per stabilizzarla e poterla poi filtrare. Ingredient: 100% Chianti Classico The Vineyard: the vineyards on the hills of San Donato in Perano are 400/450 meters a.s.l.; the vines, pruned following the “spare Gordon” system on highly positioned grounds exposed to the south, produced 60 quintals of grapes per hectare. The distillation: made with two discontinuos stills where the vinaccia is put under warm water which is then heated till it boils, so that the vinaccia loses its alcoholic and aromatic components in a soft way. The ritual of distillation process consists of the elimination of the first liquid coming out, classified as “head”, the keeping of the “heart”, which is the precious part of the distilled, and the separation of the “tail”, e.g. the liquid which last comes out, as it contains unpleasant substances. The product which is obtained is aged for more than one year an during the refinement period the components of that crystalline melt and change in soft, almost invisible shades. The grappa is then diluted to lower the gradation from 76° to the desired one and is chilled at a temperature of some degrees minus zero, in order to be stabilised and then filtered. Analytical data: alcohol 41,00% by volume. Invecchiata nelle nostre barriques di legno di quercia francese per un periodo di oltre due anni. Colore ambrato, profumo che fonde quello originale della grappa a lievi note di fieno, che la caratterizzano con altre note vanigliate e di cacao. Il sapore ripete le sensazioni rilevate all’olfatto, fondendo e addolcendo le note quasi aggressive di una grappa giovane con tannini ed altri composti, risultato della lunga e silenziosa maturazione in legno. Il gusto diventa persistente e il consiglio è di assaggiarla in un bicchiere grande, mai fredda ma a circa 20° C e con l’accortezza di lasciarne uscire il profumo. This grappa has been left to age in our French oak barriques for over two year. An amber-coloured grappa, a scent combining the original grappa scent with light hay notes, which characterise it with other notes of cocoa and vanilla. When tasted, the sensations identified after smelling are reproduced, melting and almost sweetening the fairly aggressive notes of a young grappa with tannins and other substances. This is a result of a long maturation process in the wood. The taste of the grappa tends to become persistent and our final advice to sip it from a large glass, never chilled but a temperature of about 20°C, remembering to let the scent come out.
