VINIFICATION
Harvest time: end of October (handly picked usually at the end of the
harvest). after the maceration and fermentation for about 30 days in oak
Slavonian casks with open top, follow a refinement, for about 20 months,
part in barriques, part in tonneaux and part in the same Slavonian oak
casks where fermentation happened. The wine is bottled unfiltered and
unfined almost one year before the release on the market.
CHARACTERISTICS
Deep rubin red. The bouquet reveals black cherry, ripe cherry and
blackcurrant, with dark spices, goudron and licorice. The flavor is complex
and polished style, with noble and powerful tannins and mineral accents
that intensify the vivacity, the power and the integrity. The aftertaste of
hide, tobacco and cloves is very long.
FOOD PAIRING
Recipe as stew, braised and overcooked meat, game bird, wild boar and
long aged cheese.

VINIFICATION
Harvest: end of October. Stainless steel tanks maceration and fermentation
for 3 weeks, malolactic conversion and ageing part in 25 hl. oak barrels
and part in barriques (first and second passage): then selection and
blending. Final ageing in 25 hl. oak barrels and 1 year in bottle before the
launch in the market.
CHARACTERISTICS
Intense red, with purple shadows. The aromas: wild rose, violet, crisp red
fruits (redcurrant, wild strawberry), graphite and licorice. The taste shows
density and persistance, with refined tannins that make voluptuous and
savoury profile. Long finish with great freshness and mineral extension.

Roast, grilled meat, T-bone steak and first courses with meat ragout.

VINIFICATIONS
Cold maceration and soft pressure with low temperature. Stainless steel
tanks fermentation and ageing for 4 months on its lees. Bottled in the end
of May without filtration.
CHARACTERISTICS
Light golden yellow. The bouquet is very polished, with ripe peach and
apricot, tarragon, sage and sea notes. It offers deep flavor, particularly pear
and white fruits; good balance and persistance, with mineral finish. FOOD
PAIRING
White roasted meat, monkfish or similar fish and stuffed pasta first course.

VINIFICATION
Harvest: half of October. Maceration for 18 hours, bleeding and stainless
steel tanks fermentation and ageing (no stabilization and clarification).
Bottled in the half of April, with final ageing for 3-4 months.
CHARACTERISTICS
Brilliant pink. Intense perfumes: rose, cherry, pomegranate and wild
strawberry. The mouth is pleasant, presenting a core of smooth flavors and
delicate tannins that reveals in advance anise and almond aftertaste.

Appetizers with cold cuts, carpaccio, fillet steak, soups and pottages.

VINIFICATION
Cold maceration and soft pressed; fermentation 25% in stainless steel
tanks and 75% in different ages tonneau (small casks). Decanting with low
temperature and ageing for 6 months on its lees. Bottled on May, with final
ageing at minimum for 5 months.
CHARACTERISTICS
Light golden color with green shadows. The bouquet shows floreal notes of
broom and jasmine, with hints of apricot, exotic fruits, grapefruit and
balsamic notes. The taste is perfectly balanced between acidity and
minerality, with a specular aftertaste mixed with fruits, freshness and
pronounced mineral wake.

Shellfish, frying seafood, baked fish and white meat.

CHARACTERISTICS
Intense light yellow. Floreal scent of hawthorn, exotic fruits like mango and
pawpaw, honey and sea notes. The palate is weel balanced, good
freshness and mineral hints that fill the finish.

Excellent as aperitif, seafood appetizer, risotto and fresh cheese.
