TEST N. 02
Happy Birthday Ketchup – Anita Khan gives the history of the world’s favourite
sauce
One of the most popular ___________ (1) available, Heinz tomato ketchup, is
celebrating its 130th birthday. A simple sauce made from tomatoes, vinegar,
sugar and spices, Heinz sells eleven billion bottles a year in more than 140
countries. Nearly everyone likes ketchup, and most people eat it with chips (or
___________ (2) in the US) and other kinds of fast food. Some people have more
unusual ___________ (3). Apparently, President Nixon liked it on cottage cheese
and an ice cream manufacturer once tried to produce a ketchup _________ (4) –
though it didn’t catch on. But where does ketchup come from and how did it
become so ___________ (5)?
The word ketchup is thought to come from the Chinese word ke-tsiap, a kind of
pickled fish sauce with spices. In the 17th century the sauce was discovered by
Dutch and English ___________ (6), who brought it back with them to the west.
Mushroom ketchup was very popular in Britain in the 1700s and it was also
often made with walnuts. However, since Heinz created the first tomato-based
ketchup in 1876, the words tomato and ketchup just go together like fish and
chips.
Tomato ketchup contains lycopene, which __________ (7) cancer. However, you
would need to eat a whole 200ml bottle with all its salt and sugar to get enough
to make any __________ (8). In 1981 in America, a plan to save money on school
lunches caused ketchup to be classified as a __________ (9). The suggestion was
widely ridiculed and the idea was dropped.
Tomato ketchup is a very thick liquid, which makes it difficult to get out of a
glass bottle. Some people turn it upside down and ________ (10) it on the bottom,
but this can cause ketchup to shoot out of the bottom and make a _________ (11).
The secret is to turn the bottle upside down and tap it on the neck. Of course,
you could just buy a plastic squeezy bottle. Or indeed a top-down bottle, which
you store upside down so that the sauce is always ready _________ (12). In
America, they have even brought out a special bottle to fit in the fridge door,
next to the milk.
Another recent innovation was different ___________ (13) ketchup. The first one to
go on the market was green ketchup. This was made from green tomatoes –
popular in the US – but what, you may ask, was purple, orange and blue ketchup
made from? In 2001, Heinz produced ketchup in a range of colours but none of
them are still on the market. This shouldn’t be _________ (14) when research
shows that children do not usually like green food and that no one likes blue
food. In fact, the most popular colour for food is red. Perhaps this is part of the
reason for tomato ketchup’s long lasting ___________ (15)?
