artisan
beer
Do you want to know the difference
between a craft beer and the ones on
the shelves of your local supermarket?
You can, of course, let yourself be guided by
the taste. It is easy enough to identify the
characteristic, unique and personal flavour of
a good craft beer. But to really understand the
difference, we need to look further. Take the raw
materials for example. Water, cereals (barley
and wheat), hops and yeast are the only basic
and natural ingredients of a true craft beer. The
production process is different too: craft beer is
not pasteurised like its industrial counterpart
because pasteurisation kills the yeast microorganisms necessary for fermentation.
In the same way, craft beer contains no
preservatives and is unfiltered, another two
peculiarities that make a big difference. And
last but not least comes the expertise of the
master brewer, whose passion and skill give the
finished product its unique flavour and identity.

strong smell of musk.
TUBER AESTIVUM VITT. (SUMMER TRUFFLE)

“maggengo”, “maggiolo”, “statereccio”.
Period of maturity: from May to December.
Distinctive features: blackish, lumpy skin,
hazelnut coloured flesh with white marbling.
Smells of mushrooms.
TUBER UNCINATUM CHATIN VITT.
(HOOKED TRUFFLE)
Local names: “tartufo uncinato”, “tartufo nero di
Fragno”, “tartufo grigio di Borgogna”.
Period of maturity: autumn/winter.
Distinctive features: very similar to tuber
aestivum vitt.
TUBER MACROSPORUM VITT.
(SMOOTH BLACK TRUFFLE)
Local names: “tartufo nero liscio”.
Period of maturity: from October to December.
